Roasted Red Potatoes

These soft but crispy red potatoes are a classic side dish to any red meat or chicken entree.

Ingredients
  • 2 lbs. petite red potatoes, quartered
  • 1 sweet onion, chopped
  • 3 Tbsp. minced garlic
  • 4 Tbsp. olive oil
  • 2 tsp. parsley
  • 1 tsp. dry mustard powder
Instructions
  1. Preheat oven to 425˚.
  2. Cut potatoes into quarters.
  3. Chop onion.
  4. Mix potatoes, onion, olive oil, garlic, parsley and dry mustard powder in an oven safe pan.
  5. Bake in oven at 425˚ for 50 minutes.
