Purim Hamantaschen (Pareve)

Hamentashen is a treat made for Purim.  Representing Hamen’s 3-corner hat, Hamentashen can be made as a yeast dough or a shortbread dough.  This recipe is pareve which means that it is dairy.  There are many kinds of fillings that you can use.  I prefer a strawberry or apricot filling while my mother preferred the poppyseed filling called Muhn.  That can be purchased at any supermarket where they sell pie filling.

Cook time: 15-20 mins
Total time: 35-45 mins
Serves: 4 dozen cookies

 

Ingredients
  • 4 cups flour
  • 1 1/2 tsp. baking powder
  • 1 cup sugar
  • 1/2 cup margarine, softened
  • 1/2 cup Crisco
  • 2 beaten eggs
  • 1/2 cup orange juice
  • Apricot, Grape, Strawberry Preserves
Instructions
  1. Combine flour, baking powder and sugar and place in large bowl.
  2. With pastry blender, cut in margarine and Crisco.
  3. Add eggs and juice.
  4. Mix well and wrap in waxed paper and refrigerate for several hours.
  5. Divide dough into four parts and roll out each part on floured board.
  6. Cut large rounds (2 3/4 circles)
  7. Place 1 tsp. of filling or preserves flavor of your choice on each round.
  8. Bring up sides and pinch to form triangle.
  9. Bake on greased cookie sheet at 350˚ for 15-20 minutes or until golden.
  10. Enjoy!
