These soft but crispy red potatoes are a classic side dish to any red meat or chicken entree.

Ingredients
- 2 lbs. petite red potatoes, quartered
- 1 sweet onion, chopped
- 3 Tbsp. minced garlic
- 4 Tbsp. olive oil
- 2 tsp. parsley
- 1 tsp. dry mustard powder
Instructions
- Preheat oven to 425˚.
- Cut potatoes into quarters.
- Chop onion.
- Mix potatoes, onion, olive oil, garlic, parsley and dry mustard powder in an oven safe pan.
- Bake in oven at 425˚ for 50 minutes.
