This turkey breakfast tacos recipe is perfect for the day after thanksgiving. Use some leftover turkey and mix it in with fresh vegetables and a whole grain taco shell. Add shredded cheese for an extra flavor boost.

Turkey Breakfast Tacos Recipe Ingredients
- 1/4 cup cooked turkey breast
- 1/4 cup onion
- 1 green scallion
- 1/4 cup tomato
- 1/2 cup potato
- 4 large eggs
- 3 Tbsp. olive oil
- 6 whole grain soft tacos
- Sriracha
Turkey Breakfast Tacos Recipe Instructions
- Heat skillet or frying pan on medium with olive oil.
- Dice potatoes and cook in olive oil until edges are brown.
- Dice onion and add to potatoes and cook until they start to brown.
- Dice turkey breast and green scallion and add to potatoes and onions in pan.
- In a separate frying pan, heat olive oil and scramble eggs.
- Dice eggs and mix in with potatoes, onions, green scallions and turkey then remove and place in a bowl.
- Dice tomatoes and place in a small bowl.
- Lightly fry soft tacos in olive oil and place on plate.
- Fill tacos with taco mix and top with tomato and sriracha.
- Fold over and enjoy!
